1. Dice the apples and celery.

Preparation

1. Cook the black pearl rice and water per package instructions - The grains should be very tender, yet still retain their natural chewy texture.
2. Cool the rice completely on a sheetpan.
3. In a bowl, whisk together the oil, lemon juice, curry powder, salt, sugar, and mayonnaise.
4. In a separate large bowl, combine cooled rice, apples, celery, and cranberries.
5. Pour dressing over the salad mixture and mix well to combine.
6. Cool quickly (per HACCP) to internal temperature of 40 degrees F. or below.

Serving

For service: Hold refrigerated at internal temperature of 40 degrees F. or below
