Roasted red peppers, canned yield: 73%
Diced roasted tomatoes yield: 66%
Drained canned kidney beans yield: 60%

1. Dice vegetables: Roasted red peppers, tomatoes, jalapenos, and cilantro.
2. Drain and rinse beans.

Preparation

1. Combine all ingredients in a bowl and mix well.
2. Allow the mixture to “marinate” for at least 1 hour before serving.
3. Label, date, and refrigerate.
