1. Preheat oven to 325 degrees.
2. Mix marinara and water together.
3. Grease hotel pans.

Preparation

1. Weigh out 3 lb. 2 oz. of noodles per hotel pan.
2. Add 7.5 qt of marinara and water mix to each pan of noodles.
3. Weigh out 3.25 lb of mozzarella per hotel pan (first mozzarella amount).
4. Mix all ingredients well.
5. Bake in oven for 30 minutes or until an internal temperature of 165 degrees is reached.
6. Top with remaining 2lb of mozzarella (second amount) per pan and 1.5 lb parmesan cheese per pan.
7. Place back in the oven for an additional 5-10 minutes or until top cheese layer is melted and slightly browned.
