Recipe Instructions

  • Pre-Preparation Instructions:

    Make black bean side dish. It is 2oz black beans per serving. Prepare Pico De Gallo it is .5oz per serving.

  • Preparation Instructions:

    1. Mix all spices with oil to make a rub.
    2. Combine rub with chicken and place in a hotel pan (10 lb)
    3. Heat in 350 degree oven for 25 minutes.

  • Serving Instructions:

    10 lbs = 80 servings of 2 ounces
    Place 2 ounce chicken on 1 tortilla.
    ITb pico served on top of the chicken in the taco.
    Black beans are served on the side
