Instructions
Pre-Preparation
1. Thaw fajita meat and cheeses under refrigeration.
2. Preheat oven to 350 degrees F.
Preparation
1. In hotel pans, mix chicken with spices.
2. Cover the pans with parchment paper and foil.
3. Heat covered chicken in hotel pans at 350 degrees for approximately 15 minutes or until internal temperature reaches 165 degrees.
4. In a separate container, mix the cheeses together.
5. Line sheetpans with parchment paper and lay down 14 hoagie rolls openface per pan.
6. Place 3oz. of chicken on each roll.
7. Top each sandwich with 1/2oz. of cheese mix and place in oven at 350 degrees for approximately 10 minutes or until cheese melts.
8. Serve sandwiches immediately.
If preparing ahead or transporting out:
2. Cover with parchment and foil, label, and keep refrigerated until service or transport.
3. Mix the cheeses in storage containers, label, and keep refrigerated until service or transport.
4. When ready to serve, follow cooking instruction steps 3-8 above.
