Instructions
Pre-Preparation
1. Thaw cheese and tortillas.
2. Preheat oven to 350 degrees F.
Preparation
1. Combine cheese and salsa.
2. Using a #8 scoop level, place 2.8oz of cheese/salsa mix on 1/2 of tortilla.
3. Evenly spread filling over the half to 1/2 inch from edge. Then, fold over tortilla.
4. Shingle on sheet pans 3x5, 15 quesadillas per pan.
5. If preparing ahead or transporting out: Cover with parchment. Wrap with plastic film lengthwise. Label, date, refrigerate until transport.
6. When ready to cook, bake the quesadillas unwrapped at 350 degrees just until the cheese is melted and the edges begin to brown. This only takes a few minutes.
7. Let the quesadillas sit for 5 minutes to set.
8. Cut quesadillas in half.
