Pre-Preparation

Sweet potatoes yield 85% with skin

1. Clean potatoes.
2. Place potatoes straight up in the Hobart chopper and slice using the 5/32 (4) blade.
3. Preheat oven to 350 degrees F.

Preparation

1. Mix the sliced potatoes with oil and salt.
2. Spread potatoes on lined sheet pans, make sure they are not overlapping.
3. Bake at 350 degrees for 25 minutes.
