Preparation

1. Place rice and water in bowl of rice cooker. Ratio = 1 part rice to 1 part water.
2. Stir well and cover with lid.
3. Turn on rice cooker and cook until rice cooker indicates that it’s ready.
Note: Alternatively, combine rice and water in hotel pans and cook in steamer until tender, about 20-30 minutes.
4. Once the rice is cooked, transfer rice to hotel pans, 7lb 13oz per pan.
5. Mix rice with salsa (one cup salsa per one quart rice).
