Instructions

Preparation

1. Place rice and water in bowl of rice cooker. Ratio = 1 part rice to 1 part water.
2. Stir well and cover with lid.
3. Turn on rice cooker.
4. Do not lift lid until rice cooker indicates that the rice is ready.
Note: Alternatively, combine rice and water in hotel pans and cook in steamer until tender, 20-30 minutes.

Serving

Serving options:
1. If using rice in another recipe, cool rice on sheetpans and store, covered, in the walkin.
2. If using for service, transfer to 2-inch hotel pans (7lb 13oz per pan) and hold hot according to HACCP SOP.
3. Rice may also be served straight from the rice cooker if it makes sense for the service line.
