Instructions

Pre-Preparation

Potatoes, diced, cooked, with skin yield 99%
Cucumber, unpeeled, yield 98%
Red Onion, uncooked, yield 88%
Tomatoes yield 87%
Black olives, sliced, drained yield 54%

Prep Vegetables:
1. Scrub potatoes then cut into large dice/wedges.
2. Deseed and cut cucumbers into half moons.
3. Julienne onions.
4. Deseed and cut tomatoes into wedges.
5. Drain olives.

Preparation

1. Boil or steam potaotes until tender.
2. Whisk together dried herbs, salt, lemon juice, and yogurt.
3. Combine potatoes, olives (drained), cheese, onions, cucumbers, and tomatoes.
4. Pour dressing over potato mixture and combine.

Serving

Serving = 1/2 cup (5.5oz)
