Pre-Preparation
Broccoli, large florets yields: 81%
Onions yield: 78%
1. Dice onion.
2. Wash and cut broccoli into florets.
Preparation
1. Saute onion in butter over medium-high heat in a pot or skillet.
2. Add broccoli.
3. Add milk and water to pot, then flavor with salt and pepper.
4. Simmer until broccoli is tender.
5. Burr mix.
6. Add the cheese and burr mix again.
If preparing ahead or transporting out:
7. Remove soup from kettle to hotel pans.
8. Chill.
9. Transfer soup to one-gallon containers (3 qt volume) and label.
10. Freeze and store frozen until transport or day of service.
