    Wash all vegetables
    Chop broccoli and small dice bell pepper
    10 sheet pans per 100 servings

  • Preparation Instructions:

    1. Strain yogurt overnight in cheese cloth. Reserve the liquid (whey)
    2. Add water to whey to a total of 34 oz for ten pies (100 servings)
    3. In a saucepan, warm the liquid to 90 degrees on the stovetop
    4. Remove from heat and stir in the salt, sugar and yeast. Allow to sit in a warm location so the yeast can proof.
    5. Add the liquid to the bowl of the hobart and start to mix slowly with the dough hook
    6. Incorporate the flour in stages and continue to mix until a ball of dough is formed and it pulls away from the sides of the mixing bowl. 7. Mix for 5 more minutes
    8. Cover bowl with plastic wrap and set in a warm place until dough has doubled in size
    9. Once doubled, punch the dough down and divide into ten equal portions
    10. Roll the dough into balls, cover and let rest for 30 minutes
    11. In a clean bowl, mix adobo sauce, yogurt and parmesan
    12. Stretch dough to form ten 11" pies and place on greased, parchment lined, sheet pans 13. Spread yogurt mixture (approximately 3 oz per pie) on each pie
    13. Top with mozzarella (4 oz per pie) veggies (3 oz of each) and the dried herbs (1/2 teaspoon of each per pie) 14. Bake at 500 degrees for 10-12 minutes until crust is crisp and bubbly

  • Serving Instructions:

    Cut each pie into 10 pieces and serve 1 piece per student
