    1) Cook the Black Pearl Rice sub-recipe (HK2270). The grains should be very tender, yet still retain their natural chewy texture.

  • Preparation Instructions:

    2)   Cool rice completely on a sheetpan.
    3)   Whisk together the lemon juice, curry powder, salt, sugar and mayonnaise.
    4)   Combine cooled rice, apples, celery and cranberries in a large bowl.
    5)   Pour dressing over the salad and mix well to combine. Cool quickly (per HACCP) to internal temperature of 40 degrees F. or below

  • Serving Instructions:

    CCP-Hold refrigerated at internal temperature of 40 degrees F. or below for service.
