Pre-Preparation

1. Preheat oven to 350 degrees F.
2. Drain and rinse beans.
3. Drain jalapenos.
4. Chop the lettuce.
5. Shred the carrots.
Preparation
1. Slice tempeh across short side of tempeh block into 1/2 ounce pieces.
2. Place the tempeh pieces on vegetable oil sprayed baking sheets then spray tempeh slices.
3. Bake tempeh until crisp and golden.
4. Toss hot tempeh strips and hot sauce.
5. Return to oven and bake until CCP-Minimum internal temperature reaches 140 degrees F. or above.
Note: Hold in warmer until meal service.
6. Combine drained beans with salt, buffalo sauce, and water then puree until smooth consistency is reached.
Note: CCP-Hold refrigerated at internal temperature of 40 degrees F. for service.
7. Combine chopped lettuce and shredded carrots in a bowl. Toss to combine.
Serving
Serving: To assemble wrap, layer the following onto a 9″ tortilla
1. Spread a #12 scoop of bean puree in the center of the tortilla
2. 1/2 cup of salad mixture
3. 1/2 oz. jalapeno slices
4. 8 slices (4oz. total) Buffalo Tempeh Slices
