Preparation

Broccoli yield 50%. 3.25# AP yields 1.625# EP (one half fish tub).

Wash broccoli. Trim stems.

Steam for 1 minute until bright green.

Shock in ice water to stop cooking process.

Cool completely.

Place 1.625# broccoli in half fish tub, 3.25 # per whole fish tub.

Serving

One half fish tub broccoli fills one salad bar 1/4 pan.
