To prepare staff for implementing salad bars or to ensure ongoing training is up to date, we recommend the following practices and tools:
Provide Foundational Salad Bar Training
To prepare the team effectively, the director should provide an initial training covering several key areas: the salad bar's impact on the menu plan, how to order and prepare products, the salad bar's setup and breakdown, food safety and using leftovers, and the procedures for meal service involving the salad bar.
For most school districts, adding a salad bar means that the service line will continue from the hot food line into the cafeteria. The point of sale may need to be relocated to be positioned after the salad bar. These changes represent significant adjustments to the daily routines of the school site team and require practice to become familiar and efficient. It is essential to budget both time and funds for staff training as part of this process.

Schedule Refresher Training Sessions
Designated professional development days or half days are ideal for group training. Many districts start by implementing a salad bar at one location until it runs smoothly. Once established, this school can serve as a training site for the next school team. Having an outline for salad bar training that aligns with each district's specific setup can be extremely beneficial. Additionally, short “refresher” training sessions can be developed and held annually to meet the requirements for Professional Standards training hours.

Develop Standard Operating Procedures
Salad bar standard operating procedures (SOPs) should be developed for the central kitchen, as well as satellite or stand-alone kitchens. SOPs reinforce the topics discussed during training sessions and ensure that all food service staff follow consistent processes. While SOPs can be customized to suit different physical environments and labor models, the overall goals remain the same: to operate the bar efficiently and safely.
SOPs should include guidelines for purchasing, receiving, storing, rinsing, processing, holding, transporting, temperature logging, and serving fresh produce, with specific guidelines for handling temperature-controlled for safety (TCS) and Potentially Hazardous Foods (PHF), as shown in the illustration.
