Recipe Instructions

    Pull hotdogs out the day before production and thaw under refrigeration.

    Count out how many hot dogs are needed for sites. Uncooked thawed hotdogs may be refrozen.

    Place hotdogs in hotel pans. Cover tightly with wrap and foil.
    Label, date, refrigerate until transport. Place chili in hotel pan, cover, label, date, refrigerate until transport. Prepare beef chili according to recipe.
    There is a 12% loss on reheat for chili.

    Add 2 cups of cold water to each pan of hot dogs. DO NOT add anything to chili.

    Bake both chili and hot dogs separately in 350 degree F oven to an internal temperature of 165 degrees F. Batch cook, start with chili - it will take longer to heat up than the hot dogs. Serving size = 1oz chili on a hot dog.

    Keep products hot as per HACCP SOP.

    Serving: Place one hot dog on bun on line. Using a #20 disher, place 1 oz weight (1 oz volume) chili on each dog.
    Use a #32 disher. PLEASE check weight versus volume of serving utensil!

    OPTIONAL choice - serve 1/4 ounce of cheddar on chili dog - OVS!

    1 oz chili = 0.2 MMA
