Pork ribs boneless yield 62%

Preparation

1. Stack whole ribs in hotel pans and cover with foil.
2. Steam for 2 hours.
3. Cool, then cut into two rib portions.
4. Cover ribs in BBQ sauce, then place 60 ribs per pans and cover with parchment and foil (30 portions per pan).
5. Cook ribs at 350 degrees for 45 minutes until internal temperature of 165 degrees.
