Instructions

Pre-Preparation

Yield for deli turkey is 70%
Yield for drained sauerkraut is 85%

1. Make homemade 1000 Island Dressing:
a. Blend together mayo, ketchup, pickles, salt, and pepper.

2. Slice cheese into 0.5oz slices.
3. Slice turkey into 0.7oz slices.
4. Place parchment paper on sheet pan and brush with butter.
5. Preheat oven to 350 degrees F.

Preparation

1. Place 24 slices of bread per sheet pan.
2. Spread 1 Tbsp of 1000 Island on each slice of bread.
3. Place 1 slice of cheese (.5oz) followed by 2oz of sauerkraut and then 2 slices of turkey (.7oz each slice).
4. Place the other slice of bread on top and brush with butter (1tsp per slice).
5. Heat sandwiches for 15 minutes at 350 degrees F.
