Instructions

Pre-Preparation

1. Drain and rinse garbanzo beans.
2. Drain and crumble feta if needed.
3. Drain olives.
4. Prep vegetables:
a. Slice tomatoes in half.
b. Cut cucumbers into half moons.
c. Dice red onion.

Preparation

1. Combine beans, olives, tomatoes, cucumbers, tomatoes, onions, and feta cheese.
2. Add all seasoning to the bean-vegetable mixture and stir to combine.
3. In a separate bowl, whisk together yogurt, oil, and lemon juice.
4. Fold in dressing to the garbanzo bean mixture.
5. Cold hold for service.
