Preparation

  1. In a tilt skillet, heat butter until melted, then add flour; whisk until a blond roux is reached.

  2. Slowly whisk in milk until smooth; bring to a gentle simmer.

  3. When thickened to a béchamel, slowly whisk in cheese and seasonings until fully melted and smooth.

  4. Transfer to the hotel pans for service.

  5. Hold hot until service at 140°F or higher.
