Pre-Preparation
Potatoes, diced, cooked, with skin yield 99%
Cucumber, unpeeled, yield 98%
Red Onion, uncooked, yield 88%
Tomatoes yield 87%
Black olives, sliced, drained yield 54%
Prep Vegetables:
1. Wash and scrub potatoes, then cut into large dice/wedges.
2. Wash and deseed and cut cucumbers into half moons.
3. Wsh and cut onions julienne style.
4. Wash and deseed and cut tomatoes into wedges.
5. Open and drain olives.
Preparation
1. Boil or steam potaotes until tender, and until internal temperature reaches 140 degrees F.
2. Whisk together dried herbs, salt, lemon juice, and yogurt.
3. Combine potatoes, olives (drained), cheese, onions, cucumbers, and tomatoes.
4. Pour dressing over potato mixture and combine.
5. Cool completely according to HACCP procedures.
6. Serve cold.
