Instructions
Pre-Preparation
1. Roast garlic:
a. Preheat oven to 350 degrees.
b. Cut garlic bulb in half across the equator then wrap in foil.
c. Roast at 350 degrees for about an hour until golden brown and soft.
d. Once cooled enough to touch, peel the garlic cloves.
2. Preheat oven to 375 degrees at least 15 minutes before you bake the pizza.
Preparation
1. Set aside mozzarella cheese & pizza crust.
2. In a large bowl, blend together roasted garlic cloves, ricotta cheese, parmesan cheese, oil, dried basil, salt, and crushed red pepper.
3. Place 4.4 oz (8 oz disher) of ricotta cheese blend on one pizza crust. Spreadout evenly.
4. Top evenly with 10 oz of mozzarella cheese.
5. Place two crust on sheet pans. Put parchment paper between the crusts to prevent sticking together.
6. If preparing ahead of transporting out: Cover pies with parchment, Place pan in bun pan bag, twist corners shut. Load onto speed racks. Label, date, and freeze. Transport pizza frozen.
7. When ready to cook: Bake at 375 degrees to approximately 10-12 minutes until the cheese begins to brown.
Note: If cooking pizzas from frozen - Pull pizza from freezer. Move one of the two frozen pizzas to another sheet pan and thaw on speed rack for 30-60 minutes before putting in oven.
Tip: Batch cook your pizza to assure high quality produce for all students throughout the lunch period.
Serving
1. Just before service, cut each pizza into 10 equal slices using a pizza wheel. Use a knife or sharp spatual to finish cutting the edges.
2. Place pan of pizza on top of a steam table for service and serve from pan.
Note: Do not transfer pizza to hotel pans or cover with plastic, this wil make the pizza soggy.
