This study examined how cafeteria employees respond to the integration of healthy, local purchases in their daily activities. In their results, the authors found that the integration of healthy, local purchases produced an additional workload that was not accounted for in the planning and implementation process. In response, they offer a set of recommendations to protect employees from these unintended consequences of changing to values-based procurement.
