This study examined the relationship between farm-to-school initiatives and environmental sustainability within the dietary and nutritional constructs of the National School Lunch Program and Healthy, Hunger-Free Kids Act. In their results, the author found that sourcing local produce, increasing scratch cooking, and using more fresh ingredients can increase a school’s environmental sustainability.
