Pre-Preparation

  1. Wash produce as needed.

  2. Mince the garlic.

  3. Dice the onion, celery, and carrots.

  4. Drain canned diced tomatoes and set aside.

Preparation

  1. Cook macaroni pasta al dente.

  2. Brown ground bison in a skillet with oil for about 15 minutes until internal temperature reaches 155°F. Season with salt and pepper.

  3. Drain the bison and set aside.

  4. Sauté onion, garlic, carrots, and celery in oil for approximately 10 minutes or until vegetables are softened.

  5. Add the beef stock, diced tomatoes, corn, and bison to the skillet.

  6. Bring to a simmer and cook for about 20 minutes.

  7. Add pasta and combine all the ingredients.
