Instructions

Pre-Preparation

  1. Preheat oven to 350°F on the day of service.

Preparation

  1. Scramble the liquid eggs in a tilt skillet for 5–7 minutes or until fluffy, then add salt and pepper. Hot hold if preparing and serving same day.

  2. Cook the turkey sausage in a tilt skillet for 15–20 minutes or until internal temperature of 165°F is reached. Alternately, the sausage can be baked on sheet pans at 350°F until 165°F is reached. Hot hold if preparing and serving same day.
    Note: If preparing ingredients ahead, cool the eggs and sausage separately per HACCP SOP.

  3. Add all ingredients together except the tortillas and mix evenly.
    Note: If preparing ingredients ahead, mix together all cooled ingredients. Label, date, and refrigerate until the day of service.

  4. Add 6 oz. of the mixture to each 9″ tortilla and roll.

  5. Reheat burritos in a preheated oven until internal temperature reaches 165°F.
