Wash produce as needed.

Thaw edamame under refrigeration at 41°F or less the day before service.

Peel and mince ginger.
Preparation

Place edamame in 2-inch hotel pans.

In a bowl, whisk together soy sauce, rice vinegar, and brown sugar until the sugar dissolves.

Whisk in oil, ginger, and red pepper flakes.

Pour dressing over edamame and stir to coat.

Refrigerate to chill and hold cold until service at 41°F or less.
