Instructions

Pre-Preparation

  1. Make the sauce:
    Sauce ingredients: diced tomatoes, tomato paste, olive and canola oil, whole peeled garlic, parsley flakes, thyme, basil, oregano, kosher salt, black pepper.
    a. Refrigerate all tomato products for at least 3 hours before making the sauce.
    b. Combine all ingredients in a large container (in batches if needed).
    c. Blend thoroughly with an immersion blender or blender until smooth.
    d. Keep the sauce refrigerated.

  2. Preheat oven to 350°F.

Preparation

  1. Pan setup (per hotel pan):
    a. Add 2 lb 5 oz prepared red sauce to the pan.
    b. Add 160 meatballs (1 bag) plus an additional 2 quarts of sauce.
    c. Total pan weight will be approximately 9.57 lb.

  2. Cover with parchment and foil.

  3. Bake at 350°F for 25-30 minutes, or until the internal temperature reaches 165°F.

  4. Hold hot until service at 140°F or higher.

Serving
Serving = 5 meatballs on a hoagie roll
Top each sandwich with 1/2 oz of mozzarella cheese upon request.
