Instructions

Pre-Preparation

  1. Wash and scrub the potatoes.

  2. Cut into french fries using a food chopper or knife.

  3. Cover with cold water immediately after cutting.

  4. Preheat oven to 400°F.

Preparation

  1. Blanch potatoes in boiling water in a tilt skillet for 1–2 minutes (or steam briefly in perforated pans).

  2. Drain well, then toss potatoes with oil and salt.

  3. Spread in a single, non-overlapping layer on parchment-lined sheet pans.

  4. Bake at 400°F for about 10 minutes, or until lightly golden and tender. Stir if browning unevenly.

  5. Serve immediately, or hold hot until service at 140°F or higher.
