Pre-Preparation
- Wash and scrub the potatoes.
- Cut into french fries using a food chopper or knife.
- Cover with cold water immediately after cutting.
- Preheat oven to 400°F.
Preparation
- Blanch potatoes in boiling water in a tilt skillet for 1–2 minutes (or steam briefly in perforated pans).
- Drain well, then toss potatoes with oil and salt.
- Spread in a single, non-overlapping layer on parchment-lined sheet pans.
- Bake at 400°F for about 10 minutes, or until lightly golden and tender. Stir if browning unevenly.
- Serve immediately, or hold hot until service at 140°F or higher.
