Pre-Preparation

  1. Refrigerate all tomato products for at least 3 hours before making the sauce.

Preparation

  1. In a large container, combine diced tomatoes, tomato paste, olive–canola oil, whole peeled garlic, parsley flakes, thyme, basil, oregano, kosher salt, and black pepper (in batches if needed).

  2. Blend thoroughly with an immersion blender or blender until smooth.

  3. Cover, label, date, and keep refrigerated.

  4. Hold cold until service at or below 41°F.
