  • Potatoes, unpeeled: 99%

Pre-Preparation

  1. Wash and scrub the potatoes, then large-dice using the Hobart. Steam in perforated pans for 15–20 minutes until just tender. Cool to 41°F or less following HACCP procedures.

  2. Wash and small dice celery 

  3. Small dice onions.

Preparation

  1. Add all ingredients to a large bowl.

  2. Mix lightly until well blended. Hold cold until service at 41°F or less.
