Preheat oven to 375°F.

Wash and scrub potatoes.

Chop potatoes into large dice or wedges.
Preparation

Toss cut potatoes with oil and salt.

Place 8 lbs of potatoes per lined sheet pan.

Roast for about 40 minutes at 375°F, or until the internal temperature reaches 140°F and potatoes are soft and fluffy inside.

For best quality, serve immediately. Otherwise, hold hot until service at 140°F or higher.
