Preheat oven to 375°F.

Prepare half sheet pans by lining with parchment or spraying with pan spray.

Dice the bell peppers.

Combine all ingredients in a large mixing bowl.

Whisk until well combined.

Pour 2 lb 13 oz of egg mixture into each half sheet pan.
