  • Grapes (halved): 97%
  • Apples: 91% (skin on, cored)
  • Celery: 83%

Pre-Preparation

  1. Thaw chicken under refrigeration at or below 41°F at least 24 hours in advance, per HACCP guidelines.
  2. Wash produce as needed.
  3. Halve the grapes.
  4. Core and small dice apples.
  5. Small dice celery.

Preparation

  1. Combine chicken, grapes, apple, celery, and cranberries.
  2. Mix in yogurt, mayonnaise, black pepper, and garlic to combine.
  3. Refrigerate until ready to make wraps.
  4. Portion 3/4 cup (6oz) of chicken salad onto the center of each tortilla.
  5. Roll while folding the ends in.
  6. Slice wraps in half on a slight diagonal bias.
