Thaw potatoes in the walk-in overnight.

Wash produce as needed.

Small dice red bell peppers.

Thinly slice green onions.
- Preheat oven to 350°F.
Preparation

In a bowl, combine shredded potatoes, diced bell pepper, and two-thirds of the cheese; stir to combine.

Add 6 lb 2 oz of the mixture into each hotel pan.

In another bowl, whisk together eggs, milk, salt, and pepper.

Pour 4 lb 12 oz of the egg mixture over the potato mixture in each hotel pan.

Top each pan with 2 cups of cheese and 2 oz sliced green onion.

Bake uncovered at 350°F for about 1 hour, until the top is golden and the internal temperature reaches 165°F.

Cut each pan into 6 × 5 squares to create 30 pieces.

Hold hot until service at 140°F or higher.
