Pre-Preparation

  1. Rehydrate sun-dried tomatoes in hot water until soft and pliable; drain well.

Preparation

  1. In a food processor, process the garlic, salt, lemon juice, tahini, and rehydrated sun-dried tomatoes until smooth, scraping down the bowl as needed.

  2. Add the chickpeas and process until smooth.

  3. With the processor running, slowly stream in the oil until the hummus is smooth and creamy.

  4. Cover, label, and date; hold cold until service at 41°F or less.
