Instructions
Pre-Preparation
1. Preheat oven to 350 degrees.
2. Wash and dice green onions.
Preparation
1. In a mixing bowl, combine the liquid eggs, cottage cheese, salt, pepper, diced green onions, and shredded cheddar cheese. Use a mixer to mix until all ingredients are well combined and evenly incorporated.
2. Spray a muffin tin with non-stick cooking spray to prevent sticking.
3. Portion the egg mixture into the muffin tin using a #12 scoop (or approximately 1/3 cup per well).
4. Place the muffin tin in the preheated oven and bake for about 10 minutes.
5. After 10 minutes, turn off the oven, but leave the egg bites in the oven with the door closed for an additional 10 minutes, or until the eggs are fully set, and the internal temperature reaches 160 degrees F.
6. Hold hot at 140 degrees of higher.
