  • Garbanzo beans, canned, drained: 65%

Pre-Preparation

  1. Wash produce as needed.

  2. Drain and rinse garbanzo beans.

  3. Mince garlic.

  4. Thaw calzone dough under refrigeration at 41°F or less until pliable, about 1 to 2 hours depending on size.

  5. Preheat oven to 350°F.

Preparation

  1. Melt butter over medium heat, then add garlic and sauté for 1 minute until fragrant.

  2. Add spinach and sauté 1 to 2 minutes until wilted and it has released its liquid.

  3. Drain spinach, pressing firmly to remove excess liquid.

  4. Purée drained garbanzo beans until smooth.

  5. In a bowl, mix puréed beans, drained spinach, feta, lemon juice, and salt until well combined.

  6. Using a number 16 scoop, fill each piece of calzone dough with the mixture.

  7. Brush the edge of the dough with water, fold over, and crimp to seal.

  8. Place empanadas on sheet pans lined with two pieces of parchment, 20 empanadas per pan.

  9. Brush tops with oil.

  10. Bake at 350°F for 10 to 12 minutes, until golden brown and the filling reaches an internal temperature of 145°F.

  11. If holding hot for service, hold at 140°F or higher.
