Pre-Preparation

Yields:
Drained olives: 54%
Green onion: 83%

1. Cook rice with water according to directions on package.
2. Crumble feta if not already crumbled.
3. Dice roasted red peppers and green onions.

Note: This is a Gluten Free recipe

Preparation

1. Mix together rice, olives, feta, peppers, green onion, and oregano.
2. Blend together lemon juice and oil.
3. Combine all ingredients together.

Serving

Serving = 1/2 Cup
Serve on salad bar or as a side.
