Instructions

Preparation

1. In a tilt skillet, heat butter until melted, then add flour. Whisk until a blonde roux is reached.
2. Slowly whisk in milk until well combined. Bring to a simmer.
3. Once a thick bechamel sauce is achieved, slowly whisk in cheese and seasoning.
4. Transfer to hotel pans for service.
5. Hot hold above 140 degrees until service.
