Instructions
Pre-Preparation
1. Cook pasta in salted water for about 2 minutes until al dente.
2. Toss the pasta in 2/3 of the oil amount.
3. Mince the ginger.
4. Chop the cilantro and green onions.
5. Shred the carrots.
6. Preheat oven to 350 degrees F.
Preparation
1. To make the sauce, mix soy sauce, remaining sesame oil, lime juice, vinegar, and brown sugar with ginger, cilantro, and crushed red pepper.
2. Per pan: Mix 12.5oz. of vegetables, 3 cups of sauce, and 9lb of noodles.
3. When ready to serve, heat the noodles at 350 degrees for approximately 15-20 minutes or an internal temperature of 165 degrees is reached.
4. Hold hot until service above 140 degrees F.
