Pre-Preparation
Roast the garlic:

  1. Preheat oven to 350°F.
  2. Cut each head in half across the equator.
  3. Wrap in foil and roast at 350°F for about 1 hour, until soft and golden.
  4. Allow to cool before handling.

Preparation

  1. In a blender, add soy milk and half of the apple cider vinegar; blend briefly to combine.
  2. Let stand at room temperature for 5–10 minutes to form a “buttermilk.”
  3. In a separate bowl, add garbanzo bean liquid, the remaining apple cider vinegar, salt, and pepper.
  4. While blending with an immersion blender, slowly drizzle in the oil until the mixture thickens.
  5. Remove the roasted garlic cloves from the skins and mince.
  6. In a clean bowl, combine the soy “buttermilk,” the thickened aquafaba–oil mixture, and the minced roasted garlic; whisk until smooth.
  7. Refrigerate until ready to use. Hold cold until service at 41°F or less.
