Pre-Preparation
- Wash all produce thoroughly under running water.
- Finely dice the onions.
- Dice the fresh Roma tomatoes.
- Finely chop the cilantro.
- Dice the jalapeños.
Preparation
- In a non-reactive container, combine canned diced tomatoes, fresh diced tomatoes, onions, lime juice, diced jalapeños, chopped cilantro, cumin, and salt.
- Mix well to combine.
- Hold cold until service at 41°F or less.
