Pre-Preparation

  1. Wash produce as needed. 

  2. Large dice the butternut squash.

  3. Dice the green bell pepper, tomato, and onion.

  4. Chop the cilantro.

  5. Mince the garlic.

Preparation

  1. Heat oil in a sauté pan or tilt skillet.

  2. Add minced garlic and sauté just until lightly browned and fragrant, about 1 minute.

  3. Add corn and sauté until it begins to brown, about 2 minutes.

  4. Add squash, green bell peppers, and onion. Stir constantly and cook until squash is fork tender, about 10 minutes.

  5. Add tomato, cilantro, Italian seasoning, salt, vegetable base, and water.

  6. Mix and bring to a simmer. Cook until an internal temperature of 140°F or above is reached.
